In an effort to spice up my daily dose of Dukan Diet prescribed oat bran I’ve toyed with every extract on the market and played with muffins galore.

I’ve made chocolate muffins, pumpkin muffins, peanut butter muffins, dark chocolate muffins, carrot cake muffins, chocolate and peanut muffins, and vanilla spice muffins. They’ve all been good, but I think I might have just found my favorites: Vanilla Carob.

Wow, they are seriously good.

The oat bran count in this recipe comes out to be 2.6 tablespoons per muffin. This is a little over the 2 tbsp per day count for the cruise & consolidation phases and a little under the 3 tbsp per day count for maintenance. But, I’m in the second half of consolidation and don’t mind the little extra, it helps make the muffins denser and hold together better to have that little bit extra oat bran in there.

I ate one of these this morning, fresh from the oven, with a cup of tea and I couldn’t have felt more satisfied. It feels great to taste something so decadent and yet have it be 100% on plan for me.


  • 1/2 cup liquid egg whites
  • 1 container (6 oz) of plain, non-fat, Greek yogurt
  • 2 tbsp vanilla extract
  • 1 cup oat bran (use a finely ground oat bran)
  • 1 cup Splenda
  • 1 cup non-fat powdered milk
  • 1/2 cup ground flax seed
  • 1 tbsp baking powder
  • 1/2 tsp guar gum
  • 1 pinch kosher salt
  • 1 cup unsweetened carob chips


  • Preheat oven to 350 degrees F.
  • In a measuring cup whisk together the egg whites, yogurt, and vanilla. Set aside.
  • In a large bowl stir together all the remaining ingredients except the unsweetened carob chips (reserve them).
  • Pour the wet ingredients into the dry ones and stir to incorporate (the batter will be very thick).
  • Once everything is mixed together, stir in the unsweetened carob chips.
  • Using a muffin tin that makes 6 large muffins, spray it with cooking spray and then divide the batter evenly amongst the six muffin cups.
  • Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the tin as quickly as you can so the muffins do not steam in the tin.
